Creamy Vegan Mushroom Pasta
Servings: 2-3
Ingredients:
- 1½ cups macaroni
- 1 package black oyster mushrooms, torn into bite-sized pieces
- ¾ cup raw cashews
- 2-3 tbsp nutritional yeast
- 2-3 tbsp olive oil
- Fresh basil leaves
- Dried oregano
- Black pepper
- Salt to taste
- Water for soaking and cooking
Instructions:
- Soak the cashews in hot water for 15-20 minutes while you prep the other ingredients.
- Cook macaroni according to package directions. Reserve 1 cup of pasta water before draining.
- For the cream sauce:
- Drain the soaked cashews
- Blend them with:
- ½ cup fresh water
- 2 tbsp nutritional yeast
- ½ tsp salt
- ¼ tsp black pepper
- Blend until completely smooth and creamy
4. For the mushrooms:
- Heat 2 tbsp olive oil in a large pan over medium-high heat
- Add torn oyster mushrooms
- Cook for 5-6 minutes until golden and crispy
- Season with salt and pepper
- Add 1 tsp dried oregano
5. Final assembly:
- Add cooked pasta to the mushroom pan
- Pour in the cashew cream sauce
- Stir while adding pasta water as needed to reach desired consistency
- Add torn fresh basil leaves
- Adjust seasoning with salt, pepper, and extra nutritional yeast to taste
